Let's cook

  1. Use Medjool

Medjool dates are soft, large, and caramel-like. Deglet Noor are dry and small and make a disappointing version of this.

  2. Pit carefully

Slit each date lengthways along one side only and lift the stone out, keeping the date in one piece.

  3. Fill generously

Push a teaspoon of almond butter or a small piece of goat cheese into each cavity and press the sides gently closed.

  4. Drizzle and top

Drizzle the melted chocolate over, then scatter the pistachios, flaky salt, and a little orange zest while the chocolate is still wet.

    💡

Salt on top is what stops these being cloying. Be more generous than feels right.

  5. Set

Chill 10 minutes for the chocolate to firm, then serve.
