Pit carefully
Slit each date lengthways along one side only and lift the stone out, keeping the date in one piece.
Fill generously
Push a teaspoon of almond butter or a small piece of goat cheese into each cavity and press the sides gently closed.
Drizzle and top
Drizzle the melted chocolate over, then scatter the pistachios, flaky salt, and a little orange zest while the chocolate is still wet.
